Despite its name, the rice cooker is not a single-minded kitchen unitasker. Sure, it is the easiest way to make perfect rice, but it’s also a convenient way to cook a wide variety of foods. Here are a few examples that might just convince you to invest in an electric rice cooker or use yours more often.
Traditional risotto rice, arborio rice, is the best way to go. It goes great with my Lemon herb baked salmon or my pork tenderloins.
All the veggies will come to the top during cooking so make sure you stir it VERY well before serving. If you want to add chicken or shrimp I’d saute them separately and stir them in when it’s done cooking. ALSO I usually leave my cooked rice in the rice cooker on warm while I enjoy leftovers, BUT for this dish I don’t recommend it, the sausage will turn brown (and unappealing) and the rice will get mushy.

For this particular recipe, I toss everything in the rice cooker and let it do its magic! I used to save this dish for weekends because it was a bit of work, but using a rice cooker, I now can enjoy chicken rice even on the busiest weeknights!

Puerto Rican Arroz con Gandules
Rice can be served in so many different ways. You can have white rice alone, white rice with a variety of beans (served on top of the rice, not on the side), and yellow rice. Yellow rice is when you really get a variety since you can mix just about anything into yellow rice: beans, vegetables, meat, etc. But, perhaps the most well-known Puerto Rican rice is arroz con gandules (rice with pigeon peas). Traditionally served for Noche Buena, arroz con gandules is also a big hit for a family get-together or just for your everyday weeknight dinner. (Side note: In Trinidad, where my husband is from, they call it Rice and Peas. I’m lucky he loves it as much as I do!)
